Here is my favourite weekday curry. It's healthy, quick to make, packed full of flavour, high in protein and simply scrumptious
Easy Peasy Chickpea Curry Recipe 🍛
Ingredients:
- 2 tins (400g each) chickpeas, drained and rinsed 🥫
- 1 onion, finely chopped 🧅
- 2-3 garlic cloves, minced jo🧄
- 1 tablespoon ginger, minced
- 1 tin (400g) chopped tomatoes 🍅
- 1 full teaspoon BIG BANG! Spices Chickpea Curry Seasoning 🌶️
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1 tablespoon olive oil 🫒
- Salt and pepper to taste 🧂
- Fresh coriander for garnish (optional) 🌿
- Cooked rice or naan bread to serve 🍚🍞
Instructions:

Heat the Oil: In a large pan, heat the olive oil over medium heat. Add the chopped onion and sauté for 4-5 minutes until soft and translucent. 🧅🔥

Add Garlic and Spices: Stir in the minced garlic, ginger, cumin, coriander, and turmeric. Cook for 1-2 minutes until fragrant. 🧄🌶️

Add Chickpeas and Tomatoes: Add the chickpeas and chopped tomatoes to the pan. Stir everything together. 🍅🥫

Add BIG BANG! Seasoning: Stir in the 1 teaspoon of BIG BANG! Spices Chickpea Curry Seasoning. 🌶️ Cook for 2-3 minutes to let the flavours blend.

Simmer: Reduce the heat and let the curry simmer for 10-15 minutes until the sauce thickens and the flavours combine.

Season: Taste the curry and season with salt and pepper as needed. 🧂

Serve: Serve hot with rice or naan, and garnish with fresh coriander if desired. 🌿🍚🍞
