🥄 Ingredients
Serves 4
250g paneer, cut into cubes
2 large handfuls of fresh spinach
1 medium onion, blended smooth
1 tbsp ginger and garlic paste
1 tbsp oil or ghee
1 tsp cumin seeds
1 tsp mustard seeds
2 small cinnamon sticks
2 to 3 cloves
1 tbsp finely chopped coriander stems
1 tsp turmeric powder
1 tsp coriander powder
½ tsp red chilli powder
½ tsp fenugreek seeds
1 tsp BIG BANG! Spices Garam Masala
A handful of cherry tomatoes (or 2 medium tomatoes, chopped)
1 tsp crushed kasuri methi
Salt to taste
Fresh coriander to garnish
🔥 Method
1. Temper the spices
Heat oil in a pan. Add cinnamon, cloves, cumin seeds, mustard seeds and chopped coriander stems. Let them sizzle until they smell amazing.
2. Build the base
Add the blended onion and cook on medium heat until golden brown and slightly caramelised. Add the ginger and garlic paste and cook for another minute until it all comes together.
3. Add the ground spices
Sprinkle in turmeric, coriander, red chilli, fenugreek seeds and BIG BANG! Spices Garam Masala. Let them toast gently for 30 seconds to release their aroma.
4. Add the tomatoes
Stir in the tomatoes and cook until they soften and the masala thickens. When the oil starts to separate, you know it’s ready.
5. Paneer and spinach time
Add the paneer cubes and spinach. Stir gently so everything is coated. Add a splash of warm water and let it simmer for 5 to 7 minutes.
6. Finish it off
Crush kasuri methi between your palms and add it right at the end. Garnish with fresh coriander and taste for salt.
