Moong Dal Recipe
Ingredients:
- 1 cup yellow moong dal (red moong dhal or split yellow lentils)
- 3 cups water
- 1 medium onion, finely chopped
- 1 medium tomato, chopped
- 1-2 green chilies, slit (optional)
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (optional)
- 1/2 teaspoon garam masala
- 1 teaspoon grated ginger or 1/2 teaspoon ginger paste
- 2 cloves of garlic, minced (optional)
- 2 tablespoons oil or ghee
- Salt to taste
- Fresh coriander leaves, chopped (for garnish)
- Lemon juice (optional)
Instructions:

Rinse the Moong Dal:
- Rinse the moong dal under cold water until the water runs clear.

Cook the Moong Dal:
- In a large pot, combine the rinsed moong dal with 3 cups of water.
- Add turmeric powder and bring it to a boil.
- Reduce the heat and let it simmer for 15-20 minutes, or until the dal is soft and fully cooked. Stir occasionally to prevent sticking.

Prepare the Tadka (Tempering):
- While the dal is cooking, heat oil or ghee in a small pan over medium heat.
- Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn golden brown.
- Add minced garlic and grated ginger. Sauté for another minute until the raw smell disappears.
- Add chopped tomatoes and green chilies. Cook until the tomatoes are soft and mushy.
- Add red chili powder and cook for another minute.

Combine the Dal and Tadka:
- Once the moong dal is cooked, pour the tadka mixture into the pot of dal.
- Stir well to combine all the flavors.
- Add salt to taste and simmer the dal for another 5-7 minutes.

Garnish and Serve:
- Garnish with fresh coriander leaves.
- Add a squeeze of lemon juice if desired.
- Serve hot with steamed rice or roti.
