This easy dish was inspired by the wonderfully fragrant and out right flavourful staple Ethiopian spice - Berbere. Berbere forms a complex, aromatic and citrusy flavours with sweet undertones which is versatile enough and is perfect for a quick pasta dish.
Ingredients
- 2 sliced breast fillets
- 2 table spoons of BIG BANG! Berbere spice blend
- 2 tablespoons of sunflower oil
- 1 can of chopped tomatoes / or the equivalent in fresh tomatoes
- Salt to taste
- Handful of sugar snaps
- Handful of mushrooms
- 2 medium sized pans
Method
- Boil water, salt and olive oil in a pan until it comes to boil and add the pasta.

Prepare the chicken by sprinkling the BIG BANG! Berbere spice blend and some salt onto the chicken. Mix very well with a wooden spoon and keep to one side while you prepare the other ingredients.

Add the onion to the pan and fry the onion in the oil until it becomes translucent.

Add the chicken slices and allow to cook on both sides to seal the spices in.

Add the chopped tomatoes and some water

Add the BIG BANG! Berbere spice blend and some salt to taste. Give it a stir and cover the pan and simmer for about 25 minutes.

Just before it is ready, add the vegetables and cover for a few minutes.

Remove from heat and serve.
