Berbere Chicken Pasta

This easy dish was inspired by the wonderfully fragrant and out right flavourful staple Ethiopian spice - Berbere. Berbere forms a complex, aromatic and citrusy flavours with sweet undertones which is versatile enough and is perfect for a quick pasta dish. 

Ingredients 

  • 2 sliced breast fillets
  • 2 table spoons of BIG BANG! Berbere spice blend 
  • 2 tablespoons of sunflower oil 
  • 1 can of chopped tomatoes / or the equivalent in fresh tomatoes 
  • Salt to taste
  • Handful of sugar snaps
  • Handful of mushrooms 
  • 2 medium sized pans

Method

  • Boil water, salt and olive oil in a pan until it comes to boil and add the pasta.
  • Prepare the chicken by sprinkling the BIG BANG! Berbere spice blend and some salt onto the chicken. Mix very well with a wooden spoon and keep to one side while you prepare the other ingredients.
  • Add the onion to the pan and fry the onion in the oil until it becomes translucent.
  • Add the chicken slices and allow to cook on both sides to seal the spices in.
  • Add the chopped tomatoes and some water
  • Add the  BIG BANG! Berbere spice blend and some salt to taste. Give it a stir and cover the pan and simmer for about 25 minutes.
  • Just before it is ready, add the vegetables and cover for a few minutes.
  • Remove from heat and serve.
