This easy, Jamaican jerk chicken recipe is spicy and loaded with Caribbean flavour, marinated in a fiery Scotch bonnet marinade then chargrilled or baked. My favourite jerk chicken ever, and so easy to pull together!

Ingredients
- 12 chicken thighs
- BIG BANG Jerk seasoning to taste
- 1 lime, halved
Method
- Preheat the oven to 180C/160C fan/gas mark 4.
- Make a few slashes in the chicken and coat the chicken to taste with some BIG BANG Jerk seasoning, place in a zip lock bag or a bowl with a tight-fitting lid and let them sit for 30 minutes to one hour in the refrigerator. You can also leave them overnight.
- To cook in the oven, heat to 180C/160C fan/gas 4. Put the chicken pieces in a roasting tin with the halved lime and cook for 45 mins until tender and cooked through.
Serve with Rice and Peas or veggies of your choice
