Ingredients:
- 2 cups long-grain parboiled rice
- 1/4 cup vegetable oil
- 1 onion, finely chopped
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 cloves garlic, minced

- 1 can (14 oz) diced tomatoes
- 1 cup chicken or vegetable broth
- Salt and pepper to taste
- 1 cup frozen peas and carrots (optional)

Prepare Protein (Optional): If you're adding chicken, shrimp, or tofu, season and cook it in a separate pan until fully cooked. Set it aside.
