Easy Jollof Rice Recipe

This easy Jollof Rice recipe with Jollof Rice Seasoning Spices is sure to impress with its rich and authentic flavours.

Ingredients:

  • 2 cups long-grain parboiled rice
  • 1/4 cup vegetable oil
  • 1 onion, finely chopped
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 2 tablespoons BIG BANG! spices Jollof Rice Seasoning Spices
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken or vegetable broth
  • Salt and pepper to taste
  • 1 cup frozen peas and carrots (optional)
  • 1 lb chicken,Β prawns, or tofu (optional)

Instructions:

  1. Prepare Protein (Optional): If you're adding chicken, shrimp, or tofu, season and cook it in a separate pan until fully cooked. Set it aside.

  2. Rinse the Rice: Rinse the rice under cold water until the water runs clear. Drain and set aside.

  3. SautΓ© the Aromatics: In a large skillet or pot, heat the vegetable oil over medium heat. Add the chopped onion, red bell pepper, green bell pepper, and garlic. SautΓ© until they become soft and fragrant, about 5 minutes.

  4. Add Jollof Rice Seasoning: Stir in the Jollof Rice Seasoning Spices and cook for another 2 minutes, allowing the flavors to meld.

  5. Add Tomatoes: Add the diced tomatoes (with their juice) to the pot and cook for another 5 minutes, allowing the mixture to thicken slightly.

  6. Add Rice: Stir in the rinsed rice and coat it evenly with the tomato mixture.

  7. Add Broth: Pour in the chicken or vegetable broth. If you're using frozen peas and carrots, add them now as well. Season with salt and pepper to taste.

  8. Simmer: Reduce the heat to low, cover the pot, and simmer for about 20-25 minutes or until the rice is tender and has absorbed the liquid. If the rice is still too firm, add a little more broth or water and continue cooking.

  9. Finish and Serve: If you prepared a protein earlier, now is the time to add it back to the pot. Stir gently to combine. Remove the pot from heat and let it sit, covered, for a few minutes before serving.

  10. Enjoy: Serve your delicious Jollof Rice with a side of plantains or a fresh salad for a complete and satisfying meal. Enjoy!
