WHY HING?
Hing also known as asofetida is in the kit because a tiny amount can transform the base of a curry.
Added at the tadka stage, it hits the hot oil and loses its harsh raw smell, developing into a deep, savoury aroma that gives the curry more depth and character.
It helps create that rounded, cooked-in flavour that can otherwise feel like something is missing.
How to use it:
Add a small pinch to the hot oil with your tadka spices before the onions go in. Let it sizzle briefly, then continue with the Curry Map™.
A little goes a long way — use sparingly.
WHY KASOORI METHI?
Kasoori methi is in the kit because it gives curry that distinctive final aroma that makes it taste finished.
Added towards the end of cooking, the dried fenugreek leaves bring a warm, slightly earthy, savoury fragrance and add another layer of depth to the sauce.
It is especially good for giving richer curries that rounded, restaurant-style finish.
How to use it:
Crush a small pinch between your palms and add it near the end of cooking, then stir through and let the curry rest for a minute or two.
Use sparingly — too much can become bitter.

What is kasoori methi for?
Kasoori methi is a finishing ingredient. Crush it over the curry near the end to add deep, savoury aroma.
Do I use dhana jeeru with every masala?
No. Dhana jeeru is for the build-from-scratch curry route. Your Big Bang masalas are already balanced, so you do not need to add dhana jeeru every time.
Is Garam Masala used like the other curry blends?
No. Garam Masala is mainly a finishing spice. Add it near the end for aroma rather than cooking it for a long time.
